When I was an exchange student in Germany, my host mother made delicious foods I had never even heard of, including Käsespätzle. I asked her if she would teach me to make it. She replied matter-of-factly: no. She explained that I could learn the recipe if I had been her daughter, but as a male exchange student, there was no way. She didn’t anticipate the internet, however. Here is a Käsespätzle recipe:

Ingredients:

- 2 cups all-purpose flour

- 1 tsp salt

- 1/2 tsp ground nutmeg (optional)

- 4 large eggs

- 1/2 cup milk

- 4-6 quarts of salted water for boiling

- 2 tbsp unsalted butter

Instructions:

1. In a large mixing bowl, whisk together the flour, salt, and nutmeg (if using) until well combined.

2. In a separate bowl, beat the eggs and milk together until well blended.

3. Slowly pour the egg mixture into the flour mixture, whisking constantly until a smooth, thick batter forms.

4. Bring the salted water to a boil in a large pot or Dutch oven.

5. Place a spaetzle maker or colander over the pot of boiling water. Spoon some of the batter into the spaetzle maker or colander, and use a spatula or spoon to press the batter through the holes and into the boiling water.

6. Cook the spaetzle for about 2-3 minutes, or until they rise to the surface of the water and are cooked through.

7. Use a slotted spoon or spider to remove the cooked spaetzle from the water and transfer them to a bowl.

8. Repeat the process with the remaining batter, working in batches as needed.

9. Once all of the spaetzle are cooked, melt the butter in a large skillet over medium-high heat.

10. Add the cooked spaetzle to the skillet and toss them gently in the butter until they are coated and lightly browned.

11. Serve the spaetzle hot as a side dish or topped with gravy, cheese, or other toppings as desired. Enjoy!
