I can still remember the first time I tried cheesecake. It sounded gross and I didn’t want any. When I did, though, I was transported. Here’s a recipe so you, too, can experience this sensual delight.

Ingredients:

- 2 cups graham cracker crumbs

- 1/2 cup unsalted butter, melted

- 4 (8 oz) packages cream cheese, softened

- 1 1/2 cups granulated sugar

- 3 tablespoons all-purpose flour

- 5 large eggs

- 2 egg yolks

- 1/3 cup heavy cream

- 1 tablespoon vanilla extract

- Pinch of salt

Instructions:

1. Preheat the oven to 350°F (180°C). Grease a 9-inch springform pan with butter.

2. In a medium bowl, mix together the graham cracker crumbs and melted butter. Press the mixture into the bottom of the prepared pan.

3. In a large bowl, beat the cream cheese until smooth. Add the sugar, flour, and salt, and beat again until well combined.

4. Add the eggs and egg yolks, one at a time, beating well after each addition. Stir in the heavy cream and vanilla extract.

5. Pour the cheesecake mixture over the crust in the prepared pan. Tap the pan gently on the counter to remove any air bubbles.

6. Bake the cheesecake for 45-55 minutes, or until the center is almost set. Turn off the oven and leave the cheesecake inside for about an hour to cool gradually.

7. Remove the cheesecake from the oven and let it cool completely. Chill in the refrigerator for at least 4 hours or overnight before serving.

8. When ready to serve, remove the cheesecake from the pan and slice into desired portions.
